I was looking for some healthy bread and came across this place, so I visited yesterday and the sourdough croissant was sooo delicious! The cashier was also incredibly kind and welcoming. I’ll definitely be coming back often. Highly recommend!
Can’t get enough of Proof Bread Sourdough! They also offer extremely affordable coffee. I love my latte + chocolate croissant breakfast here!
Love this place! Friendly staff, excellent bread, pastries, pizza, sandwiches, and coffee/matcha beverages. Rosemary twists are elite as well as the sourdough. I recommend the honey lavender syrup in a matcha. Can't leave out the lemon curd danish. Big fan!

I visited Proof on Mill today. Thankfully many of their delicious baked goods were still available. I bought a ham and cheese croissant and added onion jam. The staff who helped me were attentive and friendly. My croissant was truly amazing, the jam was added perfection! Go early in the day for the best selection, though anything you buy will be delicious!
Absolutely love this bakery, I have been buying bread and pastries from them since they used to be at farmer’s market. Their quality is amazing and consistent over years. I love this new location setup and the staff are amazing. This will definitely be my new favorite spot for snacks and lunch at work.
Very cool spot with excellent sourdough products. You can really taste the quality and craftsmanship in the bread and pastries. I’m a baker myself (@katascakesaz), so I truly appreciate the skill and care behind what they do here. The flavors are spot on, and everything looks and tastes amazing. It would be great if there were a restroom or at least some hand sanitizer available, as it would make it even more comfortable to sit down and fully enjoy the delicious pastries and coffee. Overall, a wonderful place and definitely worth stopping by. 🙂

It’s loaded with savory ham and gooey, quality cheese—perfect balance for breakfast, a snack, or whatever. My visit was made even better by Aiden, who was exceptional at curating and recommending breads to match customers’ tastes. He really listened, suggested options based on what I like, and shared some great insights on the different loaves—made it feel personalized and easy, especially when deciding among all the options. Beyond that, their sourdough loaves are fantastic—crusty and full of flavor—plus other treats like morning buns and pain au chocolat. They do wood-fired pizzas in the afternoons, and the local coffee pours are spot-on. The atmosphere is bright and laid-back, great for quick grabs or chilling. Proof is committed to quality ingredients and sustainable ways, and you can tell. I highly recommend checking it out, especially for the ham and cheese croissant and some guidance from Aiden. Such a cute little coffee shop/bakery right on Mill Avenue. It has a few cozy tables inside and some seating outside, plus a nice little touch with board games available, which adds to the relaxed, welcoming vibe. As the name suggests, their specialty is artisan bread, and most of their baked goods are sourdough-based. Prices are slightly on the higher side, but you can absolutely taste and see the quality — everything looks beautiful and tastes delicious. Service is top-notch as well, friendly and attentive without being over the top. Don’t expect to park right in front — this stretch of Mill Avenue is known for limited or no parking. You can usually find something nearby if you circle around, or honestly just park a bit farther and enjoy a walk. The area is charming enough to make it worth it.
